Only 80 legs of Eduardo Donato's much sought after Jamón de Bellota are made available each year. And despite finding the recipe to create the finese ham in the world, Donato is far from a large-scale commercial farmer but is nevertheless credited with saving the Manchago de Jabugo pig from extinction. Numbers are low and the cost is high because each pig takes three years to reach maturity and there is no guarantee that it will develop to produce legs of sufficiently high quality meat.
