There is something incredibly unique about the world's most sought after ham... and when you enter the realm of the best of the best, one name has managed to rise above the rest. Only 80 legs of Eduardo Donato's much sought after Jamón de Bellota are made available each year. And despite finding the recipe to create the finese ham in the world, Donato is far from a large-scale commercial farmer but is nevertheless credited with saving the Manchago de Jabugo pig from extinction. Numbers are low and the cost is high because each pig takes three years to reach maturity and there is no guarantee that it will develop to produce legs of sufficiently high quality meat. His motto - “Patience, passion and pleasure.”

Of course, we have added the Archibald ethos of fair pricing and a more transparent and disruptive approach to create a new, exciting way to access the world's best artisanally made foods. ##For almost three decades Luana Carillo has been Sevilla’s leading vendor of artisanally produced food. Born in Sierra Morena, she was raised on an olive farm in the countryside.
Though she now resides in the Old Town, she feels a duty to the agricultural community and her airy, light-filled shop showcases the best local produce. An expert in the agri-food sector, her store is as famous for its produce as for the culinary wisdom she shares with visitors. Luana manages a network of producers, made of families, cooperatives and friends, all invested in the singular goal of spreading their local Andalusian cuisine further than their region. For Luana, a product is more than a single item, each holds a story, a social message and a recipe, and her store serves as the region’s messenger.

Between now and April 2021, we are going to be building one of the boldest plays in consumer retail, combining everything we have learned on Archibald to establish a new side of the business where we serve as the ultimate disruptive connector. We aren’t here to make our own lines of food products nor re-package those made by others because there is no replacing the excellence of our artisans, their history and their stories… in this sphere, we will serve a very different role. We are here to amplify their story and provide the mechanism which allows more people to learn, taste and enjoy them. The packaging of every item will be kept as-is, whether beautiful or not, whether practical or not we aren’t here to bastardise, homogenize or drain any item of it’s authenticity. Cleanliness in branding doesn’t come into it...rather, we are here to simply find the best, the most coveted, the most craved and deliver it to you in a way no one currently does.
