Fabriqué par des Shokunin japonais travaillant dans une usine familiale située à Seki-city, dans la préfecture de Gifu au Japon, chaque lame est méticuleusement réalisée selon les techniques traditionnelles japonaises de fabrication de couteaux. Seki-city est connue au Japon comme « la ville des lames » et nos partenaires exercent dans ce domaine depuis plus de 60 ans — combinant techniques traditionnelles et avancées modernes pour créer certains des plus beaux couteaux au monde.

Craftsmanship

##Ce couteau monocouche est fabriqué en acier suédois, reconnu pour contenir moins d'impuretés que les autres types d'acier. Un couteau en acier pur est nettement plus tranchant (et plus facile à aiguiser) qu'un couteau en acier inoxydable, mais il est plus sensible à la rouille. Compte tenu de la qualité de l'acier utilisé dans sa fabrication, il reste l'acier de la plus haute qualité et le plus pur disponible, mais un entretien approprié nécessite un peu d'attention. Material

##Qu'est-ce qui les rend si différents ? Les couteaux sont fabriqués partout dans le monde, alors qu'est-ce qui rend les couteaux japonais si spéciaux ? C'est la représentation la plus authentique de la philosophie japonaise Kodawari — un dévouement intransigeant et incessant à une quête, un art, un artisanat, une activité. Caractérisés par le tranchant de la lame, la répartition du poids et la pure solidité des métaux soigneusement sélectionnés pour chaque type — le compromis n'a aucun sens dans la fabrication de chacune de ces lames japonaises.

Quality

• Cette lame en acier carboné contenant une forte teneur en carbone et une faible teneur en chrome par rapport à d'autres types, la coupe de certains ingrédients peut altérer la couleur de la lame en raison d'une réaction chimique. Si la lame s'assombrit avec un dégradé noir, un simple rinçage, nettoyage et un peu d'affutage/polissage de temps en temps suffiront. En revanche, un entretien immédiat sera nécessaire si vous constatez la formation d'un dégradé rouge, car cela peut endommager la lame.

• La coupe de différents ingrédients peut influencer l'étendue du changement de couleur au fil du temps. Si vous coupez beaucoup de citrons (ou tout fruit à forte acidité) ou d'oignons, prenez un soin particulier de la lame pendant les premières semaines. Nettoyez la lame avec un chiffon humide et séchez-la avec un chiffon propre afin que la surface de la lame « se stabilise ». Avec le temps, le couteau développera une belle patine bleu-gris mat qui formera une couche protectrice. Cette réaction peut également produire une légère odeur qui s'atténuera avec le temps.

• Pour conserver le tranchant de la lame, veillez à utiliser une planche à découper en bois et une pierre à aiguiser pour restaurer le fil. Convient pour couper légumes, viande et pain ; évitez de couper des os ou des aliments surgelés.

  • As this carbon steel blade has a high amount of carbon and a smaller amount of chromium compared to other types, cutting certain ingredients can change the colour of the blade due to a chemical reaction. If the blade colour darkens with a black gradient, a simple rinse, clean and a bit of sharpening/ polishing from time to time will suffice. However the knife will need immediate care if you spot any red gradient forming as this can damage the blade.

  • Cutting different ingredients can affect how much colour changing occurs with time. If you cut a lot of lemons (or any fruits that has high acidity) or onions, you should spend the first few weeks taking extra care of the blade. Cleaning the blade with a damp towel and drying it with another clean towel will help the blade surface 'settle.' After time, the knife should develop a distinct beautiful dull-blue-grey patina which will become a layer to protect the surface. This reaction can also produce a slight smell but this will settle over time.

  • In order to keep the blade sharp, make sure to use a wooden cutting board to preserve the sharpness of the blade and use a whetstone to recover the sharpness. Suitable to cut vegetables, meat and bread, and please do avoid cutting bone or frozen food.
