##Le tout premier tastemaker et membre fondateur de Table by Archibald. Stefano Bergonzini est un expert culinaire respecté dans le secteur de l'alimentation et des boissons en Émilie-Romagne. Nichée entre les Alpes et les Apennins, l'Émilie-Romagne abrite l'une des cuisines les plus importantes et les plus réputées d'Italie. Natif de la région, l'amour de Stefano pour la gastronomie précède ses plus anciens souvenirs mais a été cultivé dans la boutique de produits fins de son père. Ouverte en 1963, elle est devenue l'une des plus célèbres de Modena et en 1983, Stefano a pris la relève. Avec près de quatre décennies d'expérience dans l'alimentation de luxe italienne, l'expertise de Stefano est régulièrement recherchée par les producteurs, artisans et restaurants. Il siège aux conseils d'administration de multiples organisations, dédié à ce qu'il considère comme sa vocation : la préservation et la promotion de la meilleure, la plus lente, haute cuisine italienne.

Entre maintenant et avril 2021, nous allons construire l'une des initiatives les plus audacieuses du commerce de détail, en combinant tout ce que nous avons appris chez Archibald pour établir un nouveau volet de l'entreprise où nous servons de connecteur disruptif ultime. Nous ne sommes pas ici pour créer nos propres lignes de produits alimentaires ni pour reconditionner ceux fabriqués par d'autres, car rien ne remplace l'excellence de nos artisans, leur histoire et leurs récits... dans cette sphère, nous jouerons un rôle très différent. Nous sommes ici pour amplifier leur histoire et fournir le mécanisme qui permet à davantage de personnes de les découvrir, les déguster et les apprécier. L'emballage de chaque article sera conservé tel quel, qu'il soit beau ou non, pratique ou non, nous ne sommes pas ici pour dénaturer, homogénéiser ou vider un article de son authenticité. La propreté de la marque n'entre pas en jeu... nous sommes simplement ici pour trouver le meilleur, le plus convoité, le plus désiré et vous le livrer d'une manière que personne d'autre ne fait actuellement.

In Cittanova near Modena, Lino Balzarini makes some of the most respected Parmesan cheese in Emilia-Romagna. His story is somewhat different and unlike Obelix, he didn't quite fall into a vat of milk — instead Balzarini is an intellectual who developed his love affair with the world's most famous cheese later in life and turned it into his vocation. Aging at over 24 months, "stravecchio" Parmigiano Reggiano has a sweet and tasty flavour. To the touch, it looks like a cheese with a grainy and crumbly texture, excellent to be grated as an accompaniment to sauces and broths or to simply spread on pasta.

A full 40 kg wheel of Parmesan is a special commitment, and hence we made sure to carefully work with Stefano to select only the right wheels.

Launching in Spring 2021, Table by Archibald promises to be the world’s first truly local, global disruptive digital delicatessen. We believe great cuisines are great connectors and through our sumptuous selection of globally sourced, artisanal offerings, Table lets you sample the world. From far-flung flavours in century-old staples to regional delicacies and local legacies. Our servings are sought and sorted by our expert tastemakers, whose specialist local knowledge and palette sprinkle our options with snapshots of history, living memory, cultural practices and that much more. Of course, we have added the Archibald ethos of fair pricing and a more transparent and disruptive approach to create a new, exciting way to access the world's best artisanally made foods. Table is both our love letter to food and our stand against all the barriers that seek to restrict access and direct connections with all the people around the world that make things the way they should be made.

Between now and April 2021, we are going to be building one of the boldest plays in consumer retail, combining everything we have learned on Archibald to establish a new side of the business where we serve as the ultimate disruptive connector. We aren’t here to make our own lines of food products nor re-package those made by others because there is no replacing the excellence of our artisans, their history and their stories… in this sphere, we will serve a very different role. We are here to amplify their story and provide the mechanism which allows more people to learn, taste and enjoy them. The packaging of every item will be kept as-is, whether beautiful or not, whether practical or not we aren’t here to bastardise, homogenize or drain any item of it’s authenticity. Cleanliness in branding doesn’t come into it...rather, we are here to simply find the best, the most coveted, the most craved and deliver it to you in a way no one currently does.
